Here, in the heart of unspoiled Calabria, the olives, exclusively from centuries old trees, are harvested by hand before complete maturity then immediately pressed with the utmost care by our Master Olive oil expert.
Every phase of the operation is carefully monitored both in the groves and in the oil pressing plant in order to safeguard the soul of these ancient trees. Every part of the process aims at enhancing the beneficial characteristics, the quality and the excellence of a luxury Italian product.
AROMA:
Intense, decisive, compelling with a hint of chicory and green tomatoes, nuances of freshly cut grass and white moss. With a persistent aftertaste which harks back to times gone by.
FLAVOUR:
Ample, decisive presence of polyphenols, bitter undertones dominated by a perfect harmonious balance, a complex mix of vegetable fragrances are all discernible on the refined palate. An elixir of long life.
FOOD MATCHES:
Excellent to enhance truffles, caviar and oysters: Ideal instead of butter for preparing risottos.
Especially good for marinating fresh fish, on thinly sliced salted cod or stock fish, or with pasta dishes, roast meat, oven cooked lamb, fresh cheeses and raw vegetables.

VARIETY: 90% Carolea, 10% leucolea.
